Aurora Varietal Cabernet Sauvignon is a dry red wine from Cooperativa Vinícola Aurora, headquartered in Bento Gonçalves, in the Serra Gaúcha (RS). The cooperative was formed in 1931 by the union of 16 families who lived off the land, and the Varietal line, dedicated to wines from a single vinifera variety, was launched in 1986.

It is made only with Cabernet Sauvignon grapes and, according to the winery's technical sheet, has a brief spell in oak. Aurora recommends serving it between 16 °C and 18 °C, with red meats, porcini mushroom risotto, coq au vin, roast chicken with potatoes and onions or cheeses such as edam and provolone.
