Azuma Kirin Guinjo
by Azuma · Sake · Brazil
Azuma Kirin Guinjo is the top-of-the-range sake from Azuma, the brand of Latin America's first sake brewery, founded in 1934 in Brazil to serve Japanese immigrants and now linked to Kikkoman do Brasil. The house presents it as the most awarded Brazilian sake in the world and recommends it for fish and seafood dishes.
It is a ginjo of the honjozo type, with added alcohol: the rice, of the Gohyakumangoku and Nihonbare varieties according to the specialist shop e-Sakê, is polished by 40%, leaving 60% of the grain, and ferments with koji imported from Japan. Unlike other labels in the range, it contains no dextrose. It has 15% alcohol and, according to the brand, can be served at 5 °C to 55 °C, with sushi, sashimi and seafood.
