Azuma Kirin Soft
by Azuma · Sake · Brazil
Azuma Kirin Soft is a dry sake from Azuma, the brand of Latin America's first sake brewery, founded in 1934 in Brazil to serve Japanese immigrants and now linked to Kikkoman do Brasil. It is the version of the range with less alcohol than Dourado, 14% versus 15.5%, designed by the house for mixed drinks.
It is made with Japanese-variety rice polished by 30% (70% of the grain remains), koji imported from Japan and water. The rice is steamed, receives koji and yeasts and ferments for about 20 days as moromi; it is then pressed, pasteurized at 60–70 °C and filtered. The brand suggests using it in drinks, such as the sakerinha, alongside snacks and sharing plates.
