Campari
by Campari · Liqueur · Italy
Campari is an Italian bitter aperitif created in 1860 by Gaspare Campari. His son Davide expanded the brand and, in 1904, opened the first factory in Sesto San Giovanni, near Milan, where the Campari Group's headquarters now stand. In Brazil, the group has operated since the early 1980s and produces Campari at the Suape plant in Pernambuco, opened in December 2010.
It is obtained by infusing herbs and fruits, among them chinotto and cascarilla, in alcohol and water; the brand says the recipe has not changed since its creation and does not disclose the full list. The red color used to come from carmine, a dye extracted from cochineal, replaced by artificial coloring in 2006. The producer recommends it for the Negroni, Campari Spritz and Campari Soda.
