Casa Perini Brut
by Casa Perini · Sparkling wine · Vale Trentino, Serra Gaúcha, Brazil
Casa Perini Brut is the Charmat-method brut sparkling wine from Casa Perini, a winery in the Vale Trentino, in Farroupilha (RS). The family began making wine in 1929, when João Perini, the son of Italian immigrants, made wines in the cellar of his house; the company was founded in October 1970 by his son, Benildo Perini.
It is a blend of hand-picked Chardonnay and Riesling Itálico. The whole bunches go straight to the press and the must ferments with selected yeasts at 16 °C; the second fermentation in tank lasts 75 days, and the bottles rest another 45 before release, with 11 g/L of residual sugar. The house suggests serving it with salads, cheeses, smoked fish and white meat.
