Chandon Réserve Brut
by Chandon · Sparkling wine · Serra Gaúcha, Brazil
Chandon Réserve Brut is a brut sparkling wine made by Chandon in Garibaldi, in the Serra Gaúcha (RS). The Brazilian winery, which belongs to the LVMH group, opened in 1973 as the second step in the brand's expansion that began in Argentina in 1959; in 1998 it began to focus solely on sparkling wines and, in 2003, opened another winery in Encruzilhada do Sul.
It is made from Pinot Noir, Chardonnay and Riesling Itálico from Garibaldi, at 350–700 m altitude, and from Encruzilhada do Sul. Harvesting is by hand, between January and February, and the blend uses base wines from several vintages.
The second fermentation and aging last at least four months in closed tanks, under agitation and controlled temperature. Chandon suggests oysters, sushi, seafood and mild cheeses.
