Chandon Passion is the demi-sec rosé sparkling wine from Chandon do Brasil, a Moët Hennessy group winery established in Garibaldi, in the Serra Gaúcha, since 1973. It was launched in 1998, together with Excellence Brut, to celebrate the house's 25 years in the country, and Chandon presents it as an aperitif to be served over ice.
The grapes come from vineyards in the Serra Gaúcha, between 350 and 700 m altitude, and from Encruzilhada do Sul. After fermentation of the base wines and blending, the second fermentation and aging last four months in closed tanks, under agitation and controlled temperature (Charmat method). The dosage leaves 35 g/L of sugar, in the demi-sec range.
