Chimay Blue
by Chimay · Beer · Belgium
Chimay Blue is a dark Trappist beer made at the Abbey of Notre-Dame de Scourmont, in Forges, near Chimay, Belgium. Monks from the Abbey of Westvleteren settled on the Scourmont plateau in 1850, and the brewery was founded inside the monastery in 1862. Sales support the abbey and social projects.
The recipe began in 1948, when Father Théodore carried out the first trials with a new yeast. In 1954 it was sold as a Christmas beer and, in 1956, it began to be made year-round as the blue-cap beer.
It is made with water, malt, hops and yeast, has an ABV of 9% and, in the 75 cl bottle, takes the name Grande Réserve. The abbey recommends serving it between 10 °C and 12 °C.
