Errázuriz Max Cabernet Sauvignon is the Cabernet in the MAX range from Viña Errázuriz, in Chile. The winery was founded in 1870 by Don Maximiano Errázuriz, who went to plant in the Aconcagua Valley, north of Santiago, when most vineyards were close to the capital; the range bears his name. Today the house belongs to Eduardo Chadwick, of the Errázuriz-Chadwick family.
The grapes come mainly from the MAX vineyards, in the interior of the Aconcagua Valley, on colluvial soils. Hand-picked in the morning, they go through a double sorting table and ferment in stainless steel tanks, with maceration of 6 to 30 days.
The wine then matures for 12 months in French oak barrels, 20% new. The producer suggests grilled red meat, pasta and aged cheeses.
