This is a Japanese sake of the junmai category, produced by Hakutsuru Sake Brewing in Kobe, Hyogo prefecture. The house was founded in 1743 by the Kano family in the Mikage district, one of the five sake-producing zones of Nada, and became a joint-stock company in 1927; it also developed its own sake rice variety, Hakutsuru Nishiki.
It is made with Japanese rice polished down to 70% of the grain and, as the junmai category requires, without added distilled alcohol. The published sake meter value (SMV) is +4, a range classified as medium dry. It can be served chilled, at room temperature or warmed.
