Hakutsuru Sayuri
by Hakutsuru · Sake · Nada, Kobe (Hyogo), Japan
Hakutsuru Sayuri is the nigori sake from Hakutsuru, a brewery in Nada, Kobe, where the timber merchant Jihei Kano began making sake in 1743; the name Hakutsuru, 'white crane', came in 1747. Sayuri means 'little lily', and the pink bottle is the label's signature. In Brazil it is sold in the 300 ml bottle.
It is a junmai nigori, made only from Japanese rice and koji, with the rice polished to 70%. Nigori means 'cloudy': coarse filtration leaves some of the rice sediment, which gives the milky color.
It has 12.5% alcohol, an SMV of -11 and acidity of 1.6. The house recommends serving it chilled, at 5 to 10 °C, turning the bottle beforehand to mix in the sediment, and keeping it in the fridge after opening.
