Saliníssima Prata
by Saliníssima · Cachaça · Salinas, Minas Gerais, Brazil
Saliníssima Prata is the white version of Saliníssima, a cachaça made at Fazenda Matrona, in Salinas, in the north of Minas Gerais. The farm has grown cane since 1955, when Olímpio Mendes began making cachaça and rapadura there; in the late 1990s, his son Alfredo and grandson Lucas Mendes took over production. The brand now belongs to the Natique Osborne group.
It is an alembic cachaça made with fermento caipira, a wild-yeast starter, which rests for six months in stainless steel vats, with no contact with wood, according to Cachaçaria Nacional. It comes in at 40%, in a 670 ml bottle (there is also a 1-liter one), and the brand recommends it for caipirinhas and mixed drinks.
