Santo Grau Coronel Xavier Chaves
by Santo Grau · Cachaça · Coronel Xavier Chaves, Minas Gerais, Brazil
Santo Grau Coronel Xavier Chaves is the classic cachaça that Santo Grau sources from the sugar mill in Coronel Xavier Chaves, Minas Gerais, which the brand presents as the oldest still operating in Brazil, with official production since 1755. The farm was bought by the family of Tiradentes and is now run by Nando Chaves.
It is a white, unaged cachaça: distilled in a copper alembic still, using only the heart, it rests for six months in paraffin-lined underground stone tanks, built 250 years ago and listed as historic heritage. The cane is hand-harvested, without burning, and fermentation is natural. It comes in at 40%, and the house recommends it neat or in citrus caipirinhas.
