Santo Grau Paraty is the classic cachaça that Santo Grau sources from Paraty, on the coast of Rio de Janeiro state, at the edge of the Serra do Mar. The mill belongs to the Mello family, who have produced cachaça in the town since 1803, and is now run by Eduardo Mello, of the fifth generation of alembic distillers. It was named Brazil's third-best white cachaça in Veja magazine's 2010 ranking.

It is a white cachaça from the Linha Clássica (Classic range), with no time in wood. The cane is crushed in a mill driven by a water wheel, ferments naturally and slowly and is distilled in direct-fire copper alembic stills.

It comes in at 43%, in a 750 ml bottle or in the set of the three Classics in 375 ml. The house suggests pairing it with pirarucu pastéis, queijo da Canastra and carne-seca with pumpkin.
