Thikará Gold

Thikará Gold is the top-of-the-range sake from Thikará, a brand of Sakeria & Destilados, which has made sake since 2009 in Piedade, in the interior of São Paulo state. The name comes from chikara, the Japanese character for strength, and the carp drawn on the bottle recalls the Eastern legend of the fish that swims against the current and becomes a dragon. According to the house, it took first place in the 2019 GIBCMSC competition.
It is a honjozo, a style with a small addition of alcohol, made with imported short-grain rice, from which the house removes 40% in polishing. Steaming, koji, multiple parallel fermentation, pressing, pasteurization and bottling all take place at the brewery itself. It has 14% to 15% alcohol and comes in a 745 ml bottle; the house recommends it chilled or warm.
